Was there stuffing in the bird, though? That's the true test: to place a perfect salmonella breeding ground in a poultry cavity and then let it sit there, nice and warm, for hours, before feeding it to guests.
Exactly why I chose to cook the stuffing separately this first time. I got a turkey with one of those little red tabs that pops up when it reaches safe temp. I thought that would be fool proof, but the dang thing popped after 20 minutes in the oven.
